More granular Customization Knoppix LiveCD

I looking for instructions on creating a LiveCD were I can not only customize the packages that are installed but the packages themselves.

I need to configure the install with specific settings in IPTables and the email client.

Does anyone know what search terms I might use to find out more, or maybe even how to do it?
